Recchiuti Confections - Frequently Asked Questions

	Q:		How do you pronounce "Recchiuti"?
	A:		Say "ree-KYOO-tee"…as in "cutie" pie. You guessed right. It's Italian.



	Freshness, Storage & Tasting:
	Q:		How long will my Recchiuti Confections stay fresh?
	A:		By the time your confections arrive to you they are at their peak freshness. If you are able to control yourself and savor them slowly, use the following storage guidelines: 1 week: Vanilla Bean Marshmallows, S'mores Bites and S'mores Kits. 2 weeks: Pates de Fruits, Truffles and Fudge Brownies. 2 months: Asphalt Jungle Mix, Burnt Caramel Almonds, Burnt Caramel Hazelnuts, Candied Orange Peel, Cherries Two Ways, Hazelnut Bar, Key Lime Apples, Key Lime Pears, Malted Revolutions, Peanut Butter Pearls, Peanut Butter Pucks, and Peppermint Thins. 6 months: Almond, Orchard, and Sesame Nougatine Bars; Caramels. 10 months: Bittersweet, Dark Milk, Feve, and Semisweet Bars; Dessert Sauces; and Dark Hot Chocolate. Store at or just below room temperature. Refrigeration is not recommended.

	Q:		Tasting
	A:		Serve Recchiuti Confections at room temperature. This brings out the full character and bouquet of each chocolate. We recommend pairing with still spring water.

	Q:		Can I microwave your sauce jars?
	A:		No. There is foil in the sauce labels which cannot be heated in the microwave. Additionally, repeated heating and cooling of the sauce is not advised. We recommend spooning the sauce into a microwavable bowl and heating only what you plan to serve.

	Q:		Why can you not offer Key Lime Pears all year around?
	A:		We use unripened pears in the Key Lime box. Unlike apples, a ripe pear will dissolve in the key lime juice while soaking and prohibiting the best quality or yield to fulfill demand. Our Key Lime Apples are available for purchase all year.



	Ingredients & Allergies:
			Please contact us for additional ingredient information on seasonal and monthly specials. All products are made on the same machinery and may contain traces of soy, dairy, eggs, and nuts.
	Q:		What does “% cacao” mean?
	A:		This measurement indicates how sweet a chocolate is. Lower percentages mean sweeter chocolate. Technically, “% cacao” refers to the amount, by weight, of cacao bean plus cocoa butter in chocolate. The remaining weight is mostly sugar.

	Q:		Do you make anything that is low in sugar or sugar-free?
	A:		Our Bittersweet Bar is only 15% sugar and our Feve Bar is less than 15% sugar. However, we do not make anything that is sugar-free.

	Q:		Are any of your products dairy-free?
	A:		Our Bittersweet Bar, Feve Bar, Semisweet Bar, Key Lime Apples, Key Lime Pears, Pâtes de Fruits, Burnt Caramel Almonds, Candied Orange Peel, Cherries Two Ways, Peppermint Thins, and Vanilla Bean Marshmallows are dairy-free. All dairy-free items are vegan-friendly with the exception of the Vanilla Bean Marshmallow.

	Q:		Which products contain egg?
	A:		Our Vanilla Bean Marshmallows, S'mores Bites, and Fudge Brownies contain eggs.

	Q:		Which Recchiuti products contain glucose?
	A:		All our truffle and caramel products contain invert sugar (invert sugar is a stable sugar syrup made from sucrose that has been treated to break it down into its two simple sugars, glucose and fructose).

	Q:		Which Recchiuti products contain gluten?
	A:		Our Dark Milk Malted Revolutions, Honeycomb Malt, Peanut Butter Pearls, Fudge Brownies, Grahams, and S'mores Bites contain gluten and/or wheat.

	Q:		Does your chocolate contain soy?
	A:		All truffles and chocolate products contain soy lethicin, an emulsifier included in the bulk chocolate we use from our manufacturer.

	Q:		Do any of your products contain nuts?
	A:		Our Burnt Caramel Almonds, Burnt Caramel Hazelnuts, Candied Hazelnuts, Piedmont Hazelnut truffle, and Asphalt Jungle Mix contain tree nuts. Our Peanut Butter Pucks, Peanut Butter Pearls, and Asphalt Jungle Mix contain peanuts.

	Q:		Do you any of your products contain malt?
	A:		Our Dark Milk Malted Revolutions and Honeycomb Malt truffle contain malt.

	Q:		Do you any of your products contain corn?
	A:		Our Candied Orange Peel, Honeycomb Malt truffle, Tarragon Grapefruit truffle, and Vanilla Bean Marshmallows all contain corn syrup.



	Vanilla Bean Marshmallows: Ingredients: Sugar, Corn Syrup, Egg Whites, Gelatin, Whole Vanilla Bean.
	Q:		What are those black specks?
	A:		Those are vanilla bean seeds from the whole vanilla bean pod. *IMPORTANT NOTE: The Vanilla Bean Marshmallows in the S'mores Kit are meringue-like and caramelize very quickly. To prevent burning, please watch the marshmallows closely, refrain from placing too close to the heat source if broiling.



	Q:		Which chocolate manufacturers/suppliers do you use in Recchiuti chocolates?
	A:		E. Guittard, El Rey and Valrhona.

	Q:		Do you use Fair Trade chocolate?
	A:		Not at this time.

	Q:		Are any of your products organic?
	A:		Not at this time.

	Q:		Are any of your products kosher?
	A:		Not at this time.

	Q:		Do you gift-wrap?
	A:		Sorry, we don’t provide gift-wrapping services.

	Q:		Do you wholesale?

	Q:		Do you offer a chocolate-of-the-month club?
	A:		As of January 2013, our Chocolate Obsession Club is on hiatus. Any Clubs ordered before January 17, 2013 will be fulfilled and membership benefits will be honored. If you wish to be notified when we begin offering a chocolate club again, please sign up for our email newsletter.

	Q:		Do you ship to Canada or overseas?
	A:		We do not ship internationally at this time. To place an order for shipping within the United States but with a foreign address please contact our Customer Service department for assistance.

	Q:		Can I have my order sent via Ground Service?
	A:		We ship Ground to zip codes beginning with 94- or 95- as well as orders containing only non-perishable items (books, bags, and sauces). All other Recchiuti food items require Regular (2DAY) Service or faster.

	Q:		Will Michael Recchiuti personalize my copy of Chocolate Obsession?
	A:		Every copy of Chocolate Obsession you order from Recchiuti Confections is personally signed by Michael. If you’d like him to inscribe something extra, just make a note of it in the Gift Message section on the checkout page. Please note that this may delay shipping by up to two weeks.

	Q:		Can I create a custom assortment?
	A:		Custom assortments can be created exclusively at our Ferry Building Store. We invite you to visit us there!

	Q:		What is your return policy?
	A:		Our goal at Recchiuti Confections is to completely satisfy all customers. We stand behind everything we make and guarantee that our chocolates leave our facility in peak condition. Due to the perishable nature of our product, we are unable to provide refunds or exchanges for items that are not damaged or defective. (For non-perishable items, we will provide refunds or exchanges for all items.) If, for some reason, you receive a damaged or defective item, please contact us immediately. For items purchased online: We are happy to send you replacement items or to refund the original purchase price (excluding shipping). We cannot be held responsible for the following: delays caused by weather, mechanical failure or other acts beyond our control, incorrect or incomplete addresses input by the purchaser on the original web order. 	Q:		Where can I submit requests for donations?
	A:		We are proud to support Creativity Explored, SFMade, Meals on Wheels and Spark with annual donations. Additionally, we are involved in annual events at the Ferry Building Marketplace, including Food from the Heart and The Harvest Festival that benefit Slow Food, CUESA and CCOF. While we would love to support all charitable efforts, our donation budget is allocated entirely to these organizations.
